The best casseroles MUST be cooked andante - that way the flavours merge and interpenetrate each other. Never try to allegretto your stew, or you will be in a pickle!
ReplyDeleteBut, you can eat it as vivace as you like, though even here, andante wins .. a long leisurely meal, with the company of good friends and a few bottles of good wine. Aaaah. That's the way :-)
My husband likes his pasta 'Andante'. With pesto. The slow dance of basil, garlic, and parmiggiano make for an experience most delicioso. But I enjoy cooking allegro. Olive oil, herbs, pine nuts in the food processor; press the button. It tutto finito! Perfect!

When andante I eat raw. Vegan. Bread baked in a hot-by-the-sun rock is welcome. Fresh water is nice. From the well.

Banana Bread ~ My Family Recipe
2 beaten eggs
1 cup white sugar
3/4 cup butter
2 cups flour
3 tbsp milk
1 tsp baking soda
3 mashed bananas (beat in last)
pour into greased & floured loaf pan
bake in a slow oven (andante) at 350o for 1 hour
