Woo requires certain essential ingredients, or it is not woo.
ReplyDeleteIt must be deep-fried. If depth is not present, it will fail.
It must have honey. If it is not sweet, it will fail.
It must have herbs. If it lacks taste, it will fail.
It must have egg yolks. If it is not soft, it will fail.
It must have essence of passion-flower. This needs no explanation.
It must contain your own love, creativity, and individuality. If it is not you, it will fail.
If it does not succeed the first time, persevere. Try, try, and try again until it does succeed.

Pumpkin Seed-Crusted Trout with Woo-Be-Gone Salad
ReplyDelete3 cups of shredded cabbage
1 ½ cup of fresh cilantro leaves, divided
3 tbsp fresh lime juice
17 cloves of minced garlic*
½ cup of pepitas
1 tsp chili powder
2 whole boneless butterflied trout
1 egg, beaten to blend
2 tbsp of olive oil
1) Toss together cabbage, 1 cup of cilantro, garlic and lime juice in medium bowl. Season salad with salt and pepper.
2) Coarsely chop pumpkin seeds in processor. Add remaining ½ cup of cilantro and process for 10 seconds. Turn mixture out onto a plate; mix in the chili powder. Brush flesh side of each trout with egg, coating generously. Sprinkle trout with salt and pepper. Sprinkle half of pumpkin seed mixture over the flesh side of each trout and press firmly to adhere.
3) Heat 1 tsp of oil in each two large skillets over medium heat. Add 1 trout to each skillet, skin side down. Cook 2 minutes. Turn trout over and cook until browned on bottom and opaque in center, about 2 minutes. Transfer trout to plates; top with salad.
*If you leave out the garlic, the salad will be woo-becoming.
